Marmalade

Any marmalade makers out there ?

I make thick cut tawney for the whole family and for the last couple of years have been experimenting with reducing sugar content.

The results have not been brilliant, it was too syrupy but I have thrown away other recipes and made my own and the last batch is great

Bitter sweet Myra! It is gorgeous stuff! Yes Meg, I used to make my own marmalade until I discovered I really should not eat bread.

Whenever I make jam or marmalade Meg, I always put far less sugar than the recipe says but to ensure a good set boil it for longer. I find that this always works, or you can use pectin available from supermarkets.

Ah, thought I was on the right track. I tried our national brand of it, was hideous. Perhaps, like many foods, homemade is far better. That bitter stuff made me gag and the toast it was on and the jar it came in went to visit garbage land post haste.

Myra, you do make me laugh!! PROPER English marmalade is bitter sweet - sweet, like jam, but with a definite tang of Seville orange, which are very tart.

I do eat bread, I am not coeliac, but o dear does it bring on my trouble ... mainly of the windy variety ... so for the sake of my family, I don't keep bread in the house, although I love it! Trouble is, I adore it, but there we are - I either remain married and have friends, or lose all!!

Glad you got a giggle miss gnasher. I'm sure this kind is an American remake. I enjoy most kinds of jam (boysen and blue berry excluded) so perhaps I'll look for another brand and try again. Love bread, but currently limiting it on a crappy medical diet.
