Salad - what do you like to add

Following on to the Salad thread I wonder what do others like to add to their salads, not the dressing, the little something extra like crispy bacon or pancetta, garlic croútons or fried cubes of Pepperoni.

Sunflower seeds, poppy seeds, oh any seeds, love seeds in my salad and they are so good for you

Nothing meaty or fishy for me (not even anchovies ), but I do like the odd bit of mozarella or feta now and again. Sometimes a few toasted pine nuts in an avocado salad. And if I'm doing croutons I make them out of English muffins, nothing else seems to get the same combination of crunchy on the outside and slightly chewy in the middle

Thinly slice fennel, red onions and red peppers ,dress with lemon juice/olive oil/black pepper and salt.
(Organic vegetables if possible )

added I don't really like croûtons or meaty bits in salad..little tiny bits of crispy onion are nice with the above .
(thinly dice some white onions and cook very slowly in a tiny amount of olive oil in a thick bottom pan turning frequently, add a little sugar and continue cooking until they caramelise, add a little sea salt , store in the fridge)

that is EXACTLY my fav dressing too and I love adding red peppers-forgot em....

Umm, I love nuts and seeds too but having to watch the fat intake at the moment so they are out. Loving your choices will have to try anchovies again, only use them in a dish when I know you will not taste them but may be they are ok.........will try...........bit like scallops keep promising I will try them. LOVE OLIVES still eating but have cut down honest.

My OH isn't adventurous when it comes to food so for him I just put in sliced lettuce, sliced tomatoes, sliced red onions and sliced cucumber then for me and the girls I'll add...

crispy onion bits, capsicums, chives, finely diced tandoori chicken/oriental chicken. The dressing I use is Ranch or blue cheese. I only add a small amount but it's enough to give a hint of flavour
