Banana Cake and Carrot Cake

Does anyone have a foolproof recipe for a Banana cake and a Carrot cake that won't do the following:

Texture that tastes like licking sandpaper that has been covered in oil

A cake that is flat as a pancake.

A cake that is as dense as a heavy shrub

Tried so many different recipes and not sure whether it's just because I'm exceptionally bad at baking or whether it's because our oven is a monster (it's a range cooker and it's so big I could curl up and sleep in it

Advice would be welcomed.

Oooooooooooooooh I love banana cake... Especially if its all mushy inside... yummy.. I hope someone has a good recipe!!!

Me tooo Jeanette, it would be sooo great to master cake baking

If this fails then, I'll have to throw in my apron and stick to cooking Flęskesteg which is my absolute favourite

i aint got one (banana cake) ... but ive got a mate coming to see me tonight and she makes a delicious banana cake ...so watch this space... sorry cant help with the carrot cake !

Do you know "stegt flęsk med persillesovs"? That's my all time favourite food...

i think my friend will be here at about 6.30pm uk time so soon as she is here i will post the recipe.... its a really nice one i can remember that it as walnuts on the top too!!!....im off now to wipe my face from the dribble!!

No I haven't tried persillesovs before but have tried it with kartofler.

OH's Mor makes a lovely creamy layered kartofler dish too which is lovely, plus the red cherry sauce with rice pudding at Christmas.

When we come to DK all we want to eat is traditional so Mor has to get busy in the kitchen We've tried to find a restaurant that does traditional food which isn't a hotdog stand but haven't found one yet
