Christmas Recipes

I am looking for a good tried & tested Christmas Cake & Christmas Pudding Recipe please, have looked on Internet but would prefer to have one that has been tried - Thanks:smt002

My mum's been doing Delia's for the last zillion years. Very reliable.

This is the one I have been using for years always seems to come out really moist.

6oz butter
6oz brown sugar
3 large eggs
6 oz SR flour
2 table spoons black treacle
2 teaspoons mixed spice
1 bag mixed fruit (I use Sainsbury's luxury one)
plus as many extra glacee cherries as you wish!

cream butter and sugar. Whip in each egg, then add mixed spice and treacle followed by fruit. Stir in flour.

Line a 7" cake tin with grease proof paper making sure it stands above the tin. Cook for about 3 hours in middle of oven on about 110c (sorry don't do gas)

Hope this helps. I have already made mine and added about 2 tablespoons brandy to help it keep

Me neither normally but just thought it might be something OH & I can do together whilst he is on Sick Leave
