White wine and mustard sauce

Ingredients

1 Onion, finley chopped
2 tbsp Butter
200ml/ 7 fl.oz Dry White wine
3 tbsp French Mustard
250ml/9 fl.oz Double Cream
Salt and Black Pepper


Instructions

1. Fry the onion in the butter until soft and transparent. Add the wine and boil rapidly until reduced to a quarter of the original amount.

2. Stir in the cream and mustard and continue to cook until thickened. Season with salt and pepper.

I use wholegrain mustard, and it's just as nice, if not better
