Give me a recipe for a sauce for roast chicken.

Ive had it with gravy it never tastes good enough, i mean it taste like gravy, but its just too boring, ive tried putting in jam, grapes, honey. So when you make roast chicken do you ever make a special sauce as an alternative to some fatty ugly gravy?
