Yorkshire Puddings

I have NEVER made Yorkshire puds before, and want to attempt it tonight!

Can anyone give me the recipe, and the best way to do it, and make the rise!!?

Must admit its been years since I made them from scratch so don't have a recipe anymore. Tend to be lazy these days and either buy a mix or ready mades ones

But I do know that to make them rise you need the oven hot and not to open the oven door other than to take them out.

It's not so much the recipe as the temperature of the oil-must be smoking when you apply the batter !

However I do like James Martin's recipe
Ingredients
250g/10oz plain flour
8 medium free-range eggs
salt and freshly ground black pepper
500ml/1 pint full fat milk
100g/4oz beef dripping(I use oil as I don't do meat !)

Method
1. Preheat oven to 220C/430F/Gas 8.
2. Place the flour, eggs and seasoning into a food processor.
3. Turn on and blend to a paste before adding the milk. Continue to process until a smooth batter is formed.
4. Pour into a jug and place in the fridge to rest. This works best if you are able to leave it overnight.
5. Place the Yorkshire tins on a baking tray, then put the beef dripping into the tins and place in the oven. Heat for 5-10 minutes until smoking hot.
6. Pour the batter into the tins and bake for 10-15 minutes until golden brown and risen around the edges.

The 'proper' way to do a yorkshire puding is to cook it under the meat. Basically once you have almost finished roasting the beef you pour out some of the fat and put the meat on a rack in the roasting tray and poor the mix underneath. As has been said the fat/oil needs to be smoking for it to cook properly.

I use the recipe in jamie olivers ministry of food book and I think it's also on his website. They come out perfect everytime!

I also use cake tins to make giant yorkshire puddings from time to time!

They are so quick and easy to make - we have no room in our house for aunt bessie anymore!!
