15 Minute Meals!

Put some healthy oven chips on, come back 15 minutes into the time and:
  • Chop and fry onions in Olive Oil
  • When brown and golden (soft n sweet), chop and add some garlic
  • //Optional bit // > add some Peri Peri Relish from M&S (although it's much healthier without)
  • Cook for a further 5 minutes
  • Mix two (organic!!) eggs per person, then add to frying pan and mix it all up quickly before it begins to set
  • Cook a little so the bottom gets cooked and then
  • Cook the top under a grill..

Presto!

You know what? The kids love it! (without the peri peri mind) My nephews always get me to make it when I go down my sisters house They love helping too - frying the onions lol.

Inca - if you eat a lot of eggs please male sure they are organic. 'Normal' eggs are really bad - I actually react of them!
