Without being too obscure, and in no particular order:

Child in Time - Ritchie Blackmore - Deep Purple
Freebird - Allen Collins - Lynyrd Skynyrd
Sweet Child O' Mine - Slash - G 'n' R
Alive - Eddie Vedder - Pearl Jam
Shine on you Crazy Diamond - Dave Gilmour - Pink Floyd
Voodo Chile (Slight Return) - Jimi Hendrix

No, no, no - a lot of them are popular lightweights compared to:

Wishbone Ash: Sometime World, Handy, Throw Down the Sword, Lady Jay, FUBB
Some Morris Brother's stuff
Smowy White does some amazing solos (played with Pink Floyd)
Doug Boyle in For Richard (Caravan)
Camel - Ice (all guitar), Lunar Sea and Sahara
Ian Parker - Awake at Night
Burn - Deep Purple

I could go on ...

Do you mean "best" as in technically best or best as in the best composition.

For composition:

Parisienne Walkways
Layla
Sultans of Swing
mmmm and probably Stairway to Heaven

Technically best:
not sure, will have to think about it.

I feel that some technically "great" guitarists sacrifice good composition so that they can showcase their skills ...and that doesn't make for good listening. The best guitar solos take into account all aspects of good music making.
