Apple Spice Muffins

9oz (255g) plain flour
3 teaspoons (15ml) baking powder
half teaspoon (2.5ml) salt
1 and half teaspoons (7.5ml) mixed spice
4 to 5 oz (110-140g) fine white sugar
1 egg
6oz (170g) finely chopped apple
5fl oz (150ml) milk
3fl oz (90ml) vegetable oil or melted butter

Mix together flour, baking powder, salt, spice and sugar

In another bowl, beat egg and stir in chopped apple and milk followed by the oil/melted butter

Pour wet mixture into dry. Stir until combined.

Spoon into trays. Bake for 20 to 25 minutes at 375-400F (190-200c) or Gas 5 - 6

they are really easy to make. Another nice one is gingerbread muffins. Will find the recipe later.
