Kai Phad Kaphrao

Thai Chicken fried with Basil

KAI PHAD KAPHRAO (serves 4)

8 fresh green chillies, chopped lightly
8 garlic cloves, chopped lightly
2 fl.oz/50 ml peanut or corn oil
11 oz/300gm boneless, skinned chicken breast, minced
2 fresh red chillies, quartered lengthwise
1 tbsp oyster sauce
1/2 tsp fish sauce
1/4 tsp dark soy sauce
3/4 oz/20g sweet basil leaves



Pound the green chilli and garlic together with a mortar and pestle, or in a blender. Heat the oil in a wok or pan until hot, then add the chilli/garlic mixture. Fry for 1 minute. Add the chicken and stir-fry 1 minute; then add the red chilli, oyster sauce, fish sauce and soy sauce. Stir-fry for 2 minutes, mix the basil in well and serve immediately.

This goes well with Thai Jasmine rice, cooked according to the pack instructions.

I'm going to try this one tomorrow. I'll have to cut down on the chillies though, the kids whinge enough as it is

I did this one Saturday night and I have to say, it's lovely. I did have to cut out a few of the chillies though.
