White wines for risottos and light dishes, red wines for gravy and casseroles, also use madeira, port, beer and whiskey, although I tend to drink more than I put in the meal!

red wine is good in tomato-based meaty pasta sauces I'm not allowed to drink while cooking though, since I will burn myself if I do.

I don't use wine because I am the only one who drinks alcohol - two kids too! I just drink it instead.

There is some food that to me tastes all wrong if it's not cooked with wine! Risotto is defo one of them, i made one without last week and it wasn't the same!
