Garlic Prawns

Prawn and garlic sauce (pasta)


Serves 4

6 tsp olive oil
90g/3 oz butter
2 cloves garlic, finely chopped
250g/8 oz peeled prawns
salt and pepper
6 tsp chopped fresh chives



Heat oil and butter in saucepan until butter is melted.

Add the garlic and cook gently for 2-3 minutes, stirring occasionally.

Stir in the prawns and cook gently till heated through.

Season with salt and pepper, stir in the chopped chives.

Pour sauce over hot pasta (e.g. tagliatelle).






Makes a nice summer lunch, served with chilled white wine, such as Orvieto Classico
