Gingerbread Muffins

9oz (255g) plain flour
1 and half teaspoons (7.5ml) baking powder
half teaspoon (2.5ml) bicarbonate of soda
half teaspoon (2.5m) salt
1 and half teaspoons (7.5ml) ground ginger
1 teaspoon (5ml) ground cinnamon
quarter teaspoon (1.2 ml) ground nutmeg
1 egg
4 to 6 oz (110-170) soft brown sugar
2-3 tablespoons (30-45ml) black treacle or light molasses
6fl oz (180ml) milk
3fl oz (90ml) vegetable oil or 3oz (85g) melted butter

Prepare the muffin trays. Preheat oven to 375-400F (190-200C) Gas 5-6

Mix together flour, baking powder, bicarbonate of soda, salt, ginger, cinnamon and nutmeg.

In a separate bowl, beat egg and stir in brown sugar and treacle. Add milk and oil/melted butter and mix well.

Pour the wet mixture into the dry mixture and stir

bake for 20 to 25 minutes.
