Easy Creamy Chicken Curry

3 potatoes (any variety bar new) peeled and cubed. 2 apples cored & cubed, handful of raisins (optional) handful of cashews (optional) 2 large chicken breasts, cut into squares (ish)
1 pint of stock, chicken or vegetable.
2 tbsp curry powder (I use mild)
Tbspn dried ginger, same again garlic powder OR 2 cloves.
3 tbspns Greek yogurt.

Put all ingredients BAR yogurt in the slow cooker and cook on low for 6-8 hours.

After 6-8 hours swap ingredients into a deep frying pan and reduce any fluid to a minimum. (you can actually do this in the slow cooker by turning it to high and keeping the lid off, but it takes too long for me - especially as you have to stand and watch it at this point)
Turn off gas. (or electric, or cooker)
Add in yogurt and stir in thoroughly.

Serve on a bed of your favourite rice.

Yep - and you can preface all of mine with the word "Easy"

in fact, you could swap the chicken mentioned for a couple of steaks and leave out the cashews, put in an onion and have beef curry! You could also put in tomatoes - though I don't as I am very allergic to them.

Easy Chicken Casserole

2 large chicken wings
4 large potatoes sliced
3 carrots sliced
1large onion cut into rings
big handful of sweetcorn
1 tablespoon dried rosemary
1 1/2 pints chicken stock

all in the pot, potatoes and carrots on the bottom and around the edges as it takes them longer to cook and cook for 6-8 on low.

Serve.

Oh fab - that ones next!

I've just fried off some beef which is now in the slow cooker along with onions, sliced peppers, fresh tomatoes, mushrooms, and spoonful of tom puree and 2/3 of a pint of beef stock.

It should turn out gorgeous - let's hope so!

One of my favourites but very simple

1 piece of beef(ideal for cheaper!!!!!! cuts) salted and peppered
1 large glass of red wine

shallots or chopped onion,

thats it.........enjoy

Hope you like it Koda !

I currently have a Chunky Comfort Soup in my slow cooker.

that's 2 pts chicken stock , a lb of turkey mince, any veg you happen to like all cut up chunky and all popped in the slow cooker. ( for me what was in the fridge was 2 big leeks, 6 potatoes, 4 carrots, 3 sweet potatoes, and a half tin of sweetcorn)
I added 2 garlic cloves and five slices of fresh ginger and two tablespoons of honey.
Cooked on high for a min of 3-4 hours and then switched to low and I have a bowlful as I feel like it

Its very warming, and ideal comfort because at the mo I have a stinky head cold!

Another varation on the joint of beef receipe and i think its a cracker.

1 joint of brisket
2-3 carrots chopped into cubes
1 large onion chopped
1 bay leaf
salt and pepper
1/4 pint of beef stock.

season the joint, and fry in a little oil until browned then put in slo-cooker next fry veg add bay leaf and stock and bring to the boil . pour round the joint and cook for 7-8 hours on low. may need a little longer depending on the cooker and the size of joint( i usually put mine in about 9ish and we eat at 5ish)

I always use the juice and stock at the end of cooking to make a gravy just watch out for the bay leaf! The meat should just fall apart ideal for me as i cant carve a joint to save my life!
