Paella recipes

Has anyone got a really good paella recipe they'd be willing to share?

Seeing as the weather is so good we're going to have a spanish night in the garden tomorrow hopefully with a really good authentic paella. I've already got decent paella rice and a good stock of saffron so it'll just be a case of deciding what fish/meat to add.
