Very easy Muffins

9oz self raising flour,1/2 tsp bicarb,1/2 tsp salt,5oz sugar,3-5 tblsp cocoa powder

1 egg,9 fl oz milk, 1 tsp vanilla essence, 3 fl oz vegetable oil, 1 pkt of chocolate chips

12 muffin cases, muffin baking tin

Mix all the dry ingredients together in a large mixing bowl.

Mix all the wet ingredients together in a large jug. Mix well to break up the egg.

Pour the wet mixture into the dry and just stir until mixed in. Do not beat!

Put a table spoon of the mixture into each muffin case in the tin. Use the whole of the mixture. Bake at Gas 4-5 or 160 C for 25 mins. They should still be soft. Allow to cool in the tin.

Love muffins and so do the kids- will have a go at this

The muffin trays from Ikea are brilliant, you dont need cases for them. I use them for making muffins. Will look out some more recipes
