What about puff pastry parcels with a little dollop of pesto inside? I've been veggie since I was a kid and my mum used to love making these for me as they're super quick to do (you can buy the ready made puff pastry and just cut it into little squares or circles!) but taste really nice

I also second falafels, veggie quiches and quorn. They are all really tasty, quick and easy to prepare.

Also, what about pitta bread slices with humus, guacamole and tzatziki? Really quick and easy but sure to go down a treat

Thanks all. Spot and Magpyex I am liking the puff pastry ideas Can have them cooking whilst doing sandwiches. I am definitely going to try the falafels and on This morning today, or was it Lorraine..anyway they did a bulger wheat thing with veggie stock cherry tomatoes, mint lemon juice and pommegramate seeds through it
