Recipe?

Has anyone got a simple Casserole recipe, not using any tinned or jars of cook in sauce

See what you think of this

Braising Beef
Carrot or 2
Mushrooms
Red or Green pepper
Clove or 2 garlic
Tomato or 2
Onions if you like them
Thyme, parsley, bay leaf black pepper corns

Brown the meat in some olive oil, transfer to oven proof dish.
Brown the rest of the ingredients & add salt & enough water that will cover it all including steak in the dish. Cover with tight fitting lid & put in slow oven for a few hrs.

Just before its cooked, mix a couple tsp of cornflour with cold water & add to dish stirring all the time, to thicken it.

I can`t J well unless its a typical english dish but I hate onions so use garlic instead

Hows about this one


CHICKEN ROMANY

Chicken portions..however you like them
Tinned tomatoes
Sliced onion
Sliced bacon
Red or white wine
Tomato puree
chicken stock
mixed herbs (or your choice of fresh)
Garlic (optional)
Salt and cracked black pepper

Put the chicken pieces into a casserole dish, chuck the onion, tomato,herbs and garlic if using on top.
Mix the tinned tomatoes,tomato puree,wine and stock together and pour over the chicken.
Cover and put into the oven for 1-1 1/2 hrs
serve with seasonal veg, or salad or over pasta, its all good

Oh I like this thread - I have often thought that we could do with a recipe thread because I can't do all these fancy things they do in the cookery books and I hate cooking anyway. I can never find half the things in the supermarket that the books tell you that you need.

I got a slow cooker for Xmas and it's the best thing ever....Chuck it all in switch it on and forget about it...Its brilliant for soups and casseroles...

Have Sister & BiL visiting soon they are travelling down by Coach and want to have something nice waiting for them! BiL is a tad fussy with food, just like plain cooking, no garlic, onions(I can use halved or quartered so he doesn't get any)
