Sweet potato

Well. ALDI had these on their " super 6" counter, huge and 29 cents each so of course I bought one.. now I need to decide how to cook the monster without using the electric oven and sending my ESB bill up.. Great fun!

I have made soup with them or boiled and mashed them. Also have microwaved them like a baked potato split and added a knob of butter. You can make oven chips with them but that needs an oven

Not really but more so than ordinary potatoes. They are really tasty

If you put them in a roasted veg mix they carmelise a little bit same way red onions do. Well worth trying

You can make a pie with them and that is sweet same as pumpkin pie

nippy, they are lovely, one thing i have found though is they seem to take a while to bake in the oven..... longer than a"normal" potato
i like to have sweet potato baked or mashed with roasted butternit squash, onions peppers courgettes and cous cous...lovely

Someone told me this morning I can make chips but to boil them a while first.... for that reason. Your recipe sounds lovely but I can only eat a very small amount at any one time now. So just the potato and fresh vegetables I have picked for me today. Will report back later!

I cut them into chip size wedges drizzle olive oil over them and salt and pepper or any other seasoning of your fancy give them a mix and pop them in the oven till cooked they don't take long on a high heat.
Not sure how that would work in the microwave though.
