Sauerkraut - 2 jars down the drain

Well, true to fashion, my first two jars were a disaster

Just learned I was doing it wrong, you're meant to check it every day and top up the water if and when needed

Will try another batch next week now, at this rate I might have a jar by Christmas!

Anyone else make their own fermented foods?

I don't make fermented foods, but I make mead (and sometimes wine if I have a load of fruit spare).

Lol that's so true Mini good job I didn't have a blocked nose cos I probably would have tried some. Must Admit I was tempted to try some from the bottom well it was organic cabbage and I did put a lot of work into it didn't want it all to go to waste

Nice one - I make fermented ginger beer as well using Kefir grains it's actually quite nice

lol I luuurve Sauerkraut - it tastes like pickled onions to me. Tho I have no idea what 'home-made' will taste like

I want to get Wild Fermentation - it's meant to be the bible of fermented foods

Not that I know much about it, but I thought you were not supposed to make sauerkraut in a sealed jar in case it fermented too much and went bang bang.

Well my second lot were a little better but I threw them out anyway as they smelt a bit 'off'

So I ordered some off a reputable supplier and they arrived today... I'm glad I threw mine out now as this one doesn't smell anywhere near as strong as mine

So at least I know what to aim for now.

Yes that's correct - ferments should never be tightly sealed or they can explode
