So at least I know what to aim for now.
Yes that's correct - ferments should never be tightly sealed or they can explode
Azz I am quite relieved it wasn't edible being concerned you might poison yourself.
I guess you are probably too young to remember serious incidences of botulism , I think they are rare these days because of strict food preserving procedures ..
Foodborne botulism results from contaminated foodstuffs in which C. botulinum spores have been allowed to germinate in anaerobic conditions. This typically occurs in home-canned food substances and fermented uncooked dishes. Given that multiple people often consume food from the same source, it is common for more than a single person to be affected simultaneously.
I would find a good supplier where it is produced under controlled conditions.

I'm so pleased to hear you threw that 2nd lot away too Azz, I was so worried you'd end up poisoning yourself with it

You need to go into a Polish shop, they will have it in abundance, although I think it's possibly of German origin? I did see it in Sainsburys actually the other day in a large jar. I love the stuff because of course, I love my cabbage.

Onwards and upwards then Azz, what you making next then????

Stop it guys you are scaring me Mini it was your posts that put me off my first two batches (thanks, tho! lol)

I did actually 'taste' it - but only a very very small amount

I can't afford to keep buying it - it costs about £8 plus £6 postage

Helena, the stuff you buy in the supermarkets is pasteurised, so instead of being good for you will actually feed the bad bacteria in your gut

Anne - you should try it it's lovely

Have tried pickled red cabbage and that was bad enough!! Really strange as I like pickled onions and all the ingredients in pickled red cabbage but not together
