Healthier food options please :D

I really want to get healthier, foodwise.
My OH likes burgers, chips etc which is okay in moderation, but Im starting to feel really unhealthy lately and have put on over a stone in the last few months which is bad

I really need some ideas for healthier foods to eat. Some recipes [easy] would be great.

I cant spend too much on food.

I am doing this for myself and my OH who has put on alot of weight lately too.

Any help is greatly appriciated

Hi Kate as it is winter how about some vegetable soup,
it takes 30 mins to make,
..easy to make and healthy,
..you can make an amount and freeze some,
..there are lots of combinations of flavours eg mushroom/leek and potato/leek and pea/ tomato based vegetable.
I use Marigold Organic Swiss Vegetable Bouillon Powder as a stock .
Serve the soup with home made bread rolls or easier still cheese and herb scones (ask if you want more details for any of these) .

Soups.
I don't actually weight ingredients for soups, the content can vary according to the season,
Use the freshest veg you can find .

Tomato based veg soup,
2 large onion finely chopped
3 or 4 leeks well washed and chopped
3 carrot chopped
4 sticks celery chopped (I use the leaves too)
1 potato chopped
Marigold Organic Vegetable stock (health food shops and s'markets sell it)
Large tin of good quality plumb tomatoes in their own juice
Tomato puree 2 tbl spoons (I buy organic in a tube)
2 pints boiling water
Lots of black pepper
(you can add any of the following too, few mushrooms/parsnip/few peas/split lentils)
Sea salt.
1 ounce butter

The basis for many soups is the same, just vary the vegetables.
melt the butter in a large deep saucepan,
gently sauté the onions (till soft but not brown),
add the other chopped vet,
next the tomatoes and puree,
then the boiling water and stock (quantities on the tin),
bring to the boil/simmer for 25 minutes/puree with blender /pass through a sieve.
Add salt and pepper to taste.

I sometimes save a few finely shredded veg and cook separately than add to the sieved soup,

When passing soup through a sieve use a spoon with a round base like a soup spoon or ladle to push it through.
If tomatoes are in season you can use fresh ones and roast them in the oven first in a little oil.
You can add a sprig of herbs /thyme parsley/marjoram but there are herbs in the scones.

For other soups use the onion base but add other veg (like mushrooms or leek and peas)then add the stock at proceed as above.

Cheesy herb scones.
Choose a good quality strong cheese,that way you use less so it is healthier/cheaper/
Cheddar/Leicester/Double Gloucester are good.
I use strong bread flour (organic), a mixture of white and wholemeal but you can use all white.
You can use Self Raising flour and omit the baking powder but the scones will be different and not so 'robust'
I vary the herbs using fresh ones from the garden, chives and parsley,chives and marjoram, parsley and chives, mixed herbs.
You can use dried herbs, freeze dried are best

Scones
4oz wholemeal or granary bread flour
4.5oz strong white flour
1.5 oz butter
1 egg beaten
2.5 teaspoons baking powder
4 oz of cheese coarsely grated (this amount can vary to taste)
4 and a quarter fluid ounces milk
teaspoon of mustard.
Salt and pepper to taste
Cayenne pepper
Mix the flour /salt and pepper/baking powder
chop the butter and rub in to the flour mix lifting with the fingers to add air
Add the herbs to taste (not too many)
add the cheese (retaining a little to go on top)
mix the mustard/ egg/milk/add to the mixture slowly stirring with a knife (you may not require all of it, you need a nice stiff dough but it should not be wet).
gently turn out on a floured surface and mold with the hands to a smooth lump touching it as little as possible.
roll out to three quarters if an inch
cut out and place on oiled baking tray.
sprinkle remaining cheese on the top/a pinch of cayenne
bake in preheated oven 200 degrees until the top is golden and the bottom light brown (about 15 mins)
These freeze well and can be reheated from frozen in the microwave (just a few seconds)

Chicken and Turkey are both lean meats with less fat, try sticking to recipies with those in.

Why not Google some of the recipie idea websites, that's what I always do when looking for inspiration!!

Try swopping bread for tortilla wraps or pitta bread, these are healthier options.

Do you like fish? It is very good for you, low fat and is known for keeping you fuller for longer than some meats.

Swop chips for jacket potatoes.

Sid does a lovely tomato arrabiata pasta sauce which is lush and low fat if you want the recipie give me a shout.

I've also got a couple of lovely recipies in my indian cooking made easy cookbook I could let you know what they are.

As I can't have much meat in my diet. Alot of the time I put meat in a salad/pitta/wrap.

Instead of having spaghetti bolgnese I have a tomato sauce and put carrot/brocolli/pepper in instead.

I also have an omlette/egg on toast as well once or twice a week.

Things like egg fried rice/noodles are quick ad easy to cook.

I buy pizza bases and put on my own toppings.

I make my own spicy turkey or minted lamb burgers and serve with homemade potato wedges....

Cumin and a touch of madras curry powder in the turkey burgers, and mint and garlic in the lamb burgers

Hi Kate I forgot the lentils , a handful of split red lentils added to the soup as soon as all the veg are in makes it creamy and gives more body.
