No I wouldn't encourage Sal to chase anything like that, in fact she's stopped from chasing the birds although she does seem to thik they are intruding in the garden - especially if she s eating prized in the garden like a bone/chewey etc.

But I'd never "set" her to chase anything she does have a thing about chasing crows but I doubt she'd ever catch one

But even though I've have come across any rats with Sal from previous Stafford experience I doubt I could stop her chasing possibly killing a rat she is a "terrier"
