WW Recipes

BEEF & MUSHROOM STROGANOFF

Servings 4

INGREDIENTS;

350g Lean beef fillet steak, cut into 2.5cm strips
2 level tblspn(s) flour , seasoned
3 teaspoon(s) sunflower oil
1 Large onion, sliced thinly
125g mushrooms, (button) sliced
5 items (s) cherry tomatoes, (pureed)
1 tablespoon(s) worcestershire sauce
1 teaspoon(s( lemon juice
300g low-fat plain bio yoghurt
1/2teaspoon pepper
2 tablespoon(s) parsley. fresh, chopped to garnish
1/2 teaspoon salt

INSTRUCTIONS

1: Place the beef & seasoned flour in a large plastic bag & shake to coat the meat.

2: Heat 2 teaspoons of oil in a large, non stick frying pan. Saute the onion for 5 mins & then add the mushrooms & cook for a further 5 mins. Transfer to a plate, using a draining spoon.

3: Heat the frying pan, add the remaining teaspoon of oil & when the oil is just starting to smoke, add the meat. Stir fry, to brown the strips evenly. Stir in the tomato puree, worcestershire sauce & lemon juice.

4: Return the onion & mushroom to the frying pan & gently cook for 5 mins. Stir in the yoghurt & allow to heat through. Season to taste with salt & pepper & sprinkle with parsley.


This recipe is lovely. This is what we have for dinner tomorrow night. The only thing with WW recipes is that you don't seem to get much on your plate, so i sometimes double the quantity.

CHICKEN CHAAT

Points 2.5
Servings 4

INGREDIENTS

1 teaspoon salt
2 cloves garlic, chopped
1 tablespoon sunflower oil
1 teaspoon ground coriander
1/4 teaspoon turmeric, ground
2 Tablespoons fresh coriander, chopped, fresh
1/4 item fresh green or red chilli, flaked
3 medium skinless chicken breast, cut into 2.5 cm
2 tablespoon lemon juice

INSTRUCTIONS

1: On a board, use a round-bladed knife to crush the salt & garlic together until they form a pulp. Heat the oil in a non-stick frying-pan. Add the garlic & fry for 3 mins, or lightly browned.


2: Add the chicken & stir fry for 5-6 mins, until sealed & lightly coloured.

3: Sprinkle on the ground corianer, turmeric & chilli powder & stir fry for a further 3-4 mins.

4: Remove from the heat & sprinkle on the lemon juice & chopped coriander


We had this for dinner tonight with salad & a jacket potatoe....its gorgeous!!!!!!!!!!!

CHICKEN & POTATO CASSEROLE

Points: 4.5
Servings: 4

INGREDIENTS

600g potatoes, peeled thinly & cut into chunks
1 spray low fat cooking spray
350g skinless chicken thigh portion, 4 pieces ( total 350g)
4 cloves garlic
2 medium onion, quartered
3 teaspoons fresh or dried herbs, fresh mixed e.g parsley, mint,rosemary, thyme
150ml skimmed milk
1 pinch salt
1/2 teaspoon pepper

INSTRUCTIONS

1: Preheat the oven to gas mark 4/180 C/350 F. Cook the potatoes in boiling water for 5 mins. Drain, reserving 150ml (1/4 pint) of the liquor.

2: Spray an ovenpfoof dish with oil & arrange the potatoes & potatoe liquor, the chicken, garlic & onions in it.

3: Mix together the chopped herbs & milk & pour over. Season with salt & pepper to taste. Cover with greaseproof paper & bake for 45 mins, taking off the paper for the last 20mins.

Never tried this one, but it looks simple to cook & nice

Does anybody want any more put on, as i have loads more. And i have some nice pudding recipes. Please let me know if you do as it takes some time posting the recipes.
