You only need to say "left" when you hold up your left index finger. When your dog goes "left" on that indication, you say "good dog", and give a "reward".

Is the dog facing you at this time? because then the dog is actually looking to it's right? or am I thinking wrong?

It doens't really matter, but I always "my" left and "my" right

That way, you don't get confused yourself with the signals - the dog learns that left is your left finger irregardless if it is their right!
