Rough collar play

My 1-year old mutt rescue (had her about five months) loves the dog park, but recently has been playing too rough. She seemed to have learned that she can establish dominance with the other dogs by grabbing their collars, which I know is extremely dangerous. She doesn't seem to be doing it aggressively — any time she's been wrestling with another dog and there's a yelp she stops immediately. But I can't break her of the collar-grabbing, and when I try to physically intervene or get her attention away, she doesn't list to me at all. I don't want to ban her from the park but I'm not sure what to do at this point. Any advice?
