Because they are great 1st time dogs. Also my husband has allergies to most dogs. We chose Greyhounds because we didn't want a puppy and there are 1000s to choose from. We chose them for their low activity levels and for being hopefully good with children.

I would suggest tbh that "issues" such as eating faeces aren't issues at all, but natural behaviours of dogs.

I grew up with GSDs and Akitas. GSDs are the most biddable, easy going, easy to train dogs I have ever known. They are very forgiving when you make a mistake in training and any issues they have can usually be overcome with patience and hard work.
