My favourite dish so far!

Omg I'm quite enjoying all this experimenting!

What should we call this one?

It's basically fried onion and peas, with chicken, garlic, coriander and some chopped olives.. served on raw spinach! Seasoning/spices, just a little turmeric and salt and pepper



Instructions

Chop a large red onion, half slices. Put in pan with ample coconut oil on a reasonably med-high heat. After about two mins add a fair amount of fresh peas. After a bit (not before they're half done) add some salt and pepper and half a clove of garlic, squeezed. When they look 'half' done, add the pieces of chicken, and a little more salt/pepper if you desire. Once you've cooked both sides of the chicken, add a pinch of turmeric, then keep cooking on a lower heat - while doing that chop some fresh olives (cut in half, then slice) and add them.. two per person will be enough. Then after a while (just before it's nearly done) add some chopped coriander and the remainder of the garlic and let it cook on more of a gentle heat.

Once it's cooked turn off the heat, and add your raw spinach, then add some good quality olive oil. Mix gently to let the spinach soak up the juices from the pan.

Serve, enjoy!

Thanks Phil

Must admit I didn't think I'd like it (thought it'd be light/too much like salad) - so gave half the spinach away to Rocky as I was doing it ...and did some barley cous cous 'just in case'

But it was kindof nice - Rocky ate the cous cous for me
