Home Made Scottish Tablet

Just made a tray of it 2 days ago,

The recipe,

1 kilo of white sugar,
1 tin of sweetened condensed milk,
1 large cup of milk,
2 large table spoons of margarine/butter,
30 drops of vanilla essence,

Mix the sugar and milk in a large pan, heat it gently until the sugar dissolves, bring to the boil, then add the condensed milk and margarine,
Boil for 25 mins then add the vanilla ( if you have a sugar thermometer the temp is 118 C), take off the heat then beat the mixture vigorously until it starts to stiffen (this could take 15 mins) pour into a baking tray and let it set.

A small piece is 2,000 calories but what the hell.

Another good tip - when you lift off the heat to beat, sit the pan in cold water. It helps it gain the grainy texture.

Karen's a bit of a tablet expert !

Good tip Phil the beating process is to help cool it and form the sugar granules.

What is it ?

Sorry to sound stoopid, but I'm an awful cook, I can barely perfect microwave meals, so is it a biscuit or something similar ?

It's like fudge, only harder, if done right it melts in your mouth, lovely.

Oh Malady-proper tablet is to die for
Imagine hard fudge but sweeter, you can only eat a wee bit and it is lovely with decent coffee mmmmmmmm.

It is usually made in a square tray then cut up into little squares.
Not for the kids though-the sugar high is just too much (or maybe that is my excuse for keeping it all to myself

Oh I agree, if the sugar is too high, I dont want them bouncing off the walls

Kirsty, my youngest daughter lived in Hong Kong for a few years and she used to beg me to make it and send it out to her.
