PRAWNS IN A THICK CURRY SAUCE

2 tbsp veg oil
1 onion chopped
5cm cinnamon stick broken
1tsp cumin seeds
1/2tsp lazy garlic
1/2tsp dried ginger
1 fresh chilli, chopped finely
250g frozen cooked peeled prawns
150g carton natural yogurt
1tsp ground turmeric
1/2 tsp each ground coriander, ground cumin and curry powder
salt to taste
1tsp garam masala
1tbsp lemon juice
15g fresh coriander chopped

Heat oilin large pan. Add onions and cinnamon pieces and fry gently for 3-5mins until onions start to turn brown.
Stir in cumin seeds. Add garlic, ginger, chilli and prawns, Stirfry for 3-5mins
Meanwhile, mix the yogurt, turmeric, coriander, cumin and curry powder together and beat well.
Remove the prawns and onions from the frying pan using a slotted spoon and set aside.
Add the yogurt mixture to the pan a little at a time, stirring well between additions.
Add salt and allow ingredients to blend together whilst stirring.
Return the prawnsto the pan. Add the garam marsala, lemon juice and chopped fresh corriander and cook for a few more mins.
Serve at once.

GREEN CHICKEN CURRY
750g chix thigh fillets
200g green beans
1 cup coconut cream

GREEN CURRY PASTE
3 small green chilli finely chopped
3 spring onions chopped
1tsp lazy garlic
80g chopped fresh lemon grass
80g chopped fresh coriander
2tbsp oil
2tbsp water
1tsp shrimp paste
1/2 ground cumin
1/4 1sp turmeric

Green curry paste: blend all ingredients until smooth can be prepared 1week in advance cover and store in fridge.

Cut chix into thin strips. Chop beans. Add green curry paste to heated pan, cook, stirring for about 3 mins or until fragrant.
Add chix and beans to pan, cook for about 5mins or until chix is tender. Stir in coconut cream, simmer, uncover,for about 3minsor until slightly thickened.
