Yummy Chocolate Cake
8oz best-quality plain chocolate (70%if possible)
2 tablespoons milk
¼ lb. ground almonds
6 oz caster sugar
6 eggs, separated
To cover..
carton of double cream
grated chocolate to decorate(put in fridge to make grating easier or use a broken up flake)
This is a great cake, make the day before if you can then when needed coat the top with whipped cream and sprinkled with the grated chocolate..
Line an 8 inch cake tin.
Melt the chocolate gently (in microwave or on a pan of hot water) and add the milk
Beat the egg whites until stiff.
Beat the almonds, sugar and egg yolks together then stir into the melted chocolate.
Carefully fold this mixture into the beaten egg whites.
Put into the prepared tin, and bake for about 40 mins 375F(180c in my fan oven). Leave to cool in the tin.
