Lemon Juice concentrate - taste?

If I squeeze the juice of a few fresh lemons, then boil them down to 'concentrate'... what will I end up with? Something sweet ish?

I'm just wondering what it will end up tasting like

I don't think it will go sweet, as there is nothing in there to make it sweet...

It might get thicker and syrupier, but if you're not adding any form of sugar, I can't see where you'd get sweetness from

LS - yeah you know me it's on now as we speak actually lol

IsoChick - yeah I was thinking the same, so I'm gonna do it by itself first, see what it's like and then perhaps add some agave syrup to it and boil it a little while longer. Have no idea what it will taste like!

Ok... so I tried it...

It went all 'goey', and so I tasted a bit and at first I thought it _did_ taste a bit sweet, but then a really intense lemon zest flavour kicked in! (which made me pull faces! lol).

So on the whole, I think yes - it certainly 'adds something'

Mmmm I love lemon; that sounds really nice! Lemon must contain a little fructose so I suppose this would get concentrated up?

Lemon curd...easy peasy lemon squeesy ( sorry )

60 grams unsalted butter cut into cubes
130 grams of castor or granulated sugar
zest and juice of 2 lemons
2 large eggs beaten

put the butter sugar lemon juice and zest into a heavy bottomed pan, if you've not got one then use a basin over a pan with water in it. put it on a low heat until the sugar has dissolved.

slowly add the beaten eggs stirring all the time until it thickens this will take about 15 mins.

Once thick poor into a sterilized jar and seal...will keep for about a month in the fridge.

LS - I did put a tiny bit of agave syrup in there first so that could be it. I forgot about it and most of it dried up so will have a proper go next week. It definitely gave it some kick tho!

Thanks Elaine! Tho I couldn't have it cos of he sugar... anyway to substitute that with something else?
