Browned meat is absolutely fine to eat. I don't store my meat in plastic bags in the fridge - I remove all packaging and put the meat in a non-plastic bowl with cling film on the top. Like this, meat would be OK up to a week in the fridge, if not longer, depending on how well hung it was in the first place.
