Re the barking on command, she knows that one, and she knows quiet but never listens to me to do this at other times!
Not quite. She doesn't know it. The bark/quiet cue is not under stimulus control.
My dog will bark/quiet in the living room, kitchen, garden and park but cannot do it if there are squirrels in the garden or other more competing stimuli, such as a knock at the door. I'm still working on adding distractions, which is very difficult when the environment cannot be controlled.
The speak/quiet cue needs to be rock solid before you can just ask for quiet.
Good luck and just keep at it, as I am trying to do
