I do make my own mince pies though! with ready made pastry & a jar of mince meat

Yes, I think you are supposed to make them early, as long as you keep them in a sealed container..... I think! I don't know as never made one
I'm not sure about when to ice either - maybe just make the cake & ice it a day or so before Xmas? Perhaps somebody can enlighten?
PS they also do the icing/marzipan kit to go with the cake, I'll probably get that too
