Chilli Con Carne Recipes

As per the title, anyone willing to share their favourite chilli con carne recipe?

I never used to be a fan due to the kidney beans but shared a plate of chilli topped nachoes a few weeks ago with Rich and it would seem i'm over the kidney bean fear!

I've made it once with a recipe i found on BBC Good Food but i wasn't overly impressed so would be interested to see what recipes others use.

I make a lazy one, but you can add peppers and onions etc if your not feeling so lazy
I just get the mince and put it in a bowl, add a packet of colemans chilli con carne mix a tin of tomatoes and kidney beans then cook it in the microwave while the spaghetti cooks on the hob. Tastes lovely.
I started doing it that way when my daughter was little as she didn't like loads of stuff added and liked things plain.

I make my own, usually with homegrown chillis, and at the moment with homegrown onions!
1 bag frozen mince or fresh (about 500g I think)
1 large or 2 smaller onions, diced as you like, chunky or fine.
1 tin chopped tomatoes
1 very small tin of tomato puree, or really good squirt from a tube.
1 tin kidney beans, drained.
chillis, to taste!
garlic, to taste
pinch salt

Sweat off the onions, add the mince,salt & garlic, when its cooked, add the tomatoes, puree, beans and chopped chillis. Simmer for 5 or 10 mins.

This should make enough for 4, unless your really hungry!!
I usually bag up the rest and freeze it, or we have it 2 days in a row, boring but then we really enjoy it!! It really does improve for keeping a day or two in the fridge!.

You can make it as spicy as you like, my OH loves it really spicy so he tends to add a few (homemade) dried chilli flakes to it after I have dished his up!

I've also added a stock cube before but dont always. You can adjust anything to your own flavour really.
Oh and I know what you mean about the kidney bean thing, I used to be a bit wierd about them too, but now I love them!!

Heres my recipe!!

Oil
I onion...chopped
2 garlic cloves crushed
1 1/2 lbs mince
2 14oz cans chopped tomatoes
1 tbl tomatoe puree
2 tsp cumin
1-2 tbsp hot chilli powder
1 red pepper seeded and chopped
1/2 fresh red chilli
1 14oz can red kidney beans

Cook up all the above up to pepper for 45 mins, then add the rest and cook for a further 15 mins! yummy yummy!!

Beef mince
Onion
Garlic
Paprika
Chilli powder
Cayenne pepper
Tinned tomatoes
Kidney beans

Chilli/Cayenne/Paprika are to taste - depends on how hot you want it!!

OH says that my chilli never tastes the same, as I just bung in what I've got!
